Gluten Free Lobster Bisque Recipe

Ingredients
4 Tablespoons of Butter
2 Tablespoons of Finely Diced Scallions
1 Finely Diced Stalk of Celery
4 Tablespoons of Gluten-Free Sweet Rice Flour
2 Cups & 2 Tablespoons of Half and Half (or more if you prefer a bisque that’s thinner)
1 Tablespoon of Tomato Paste
2 Teaspoons of Paprika
1 Teaspoon of Old Bay Seasoning
1/8 Teaspoon of Cayenne (or to taste, whichever comes first)
1/2 Teaspoon of Cane Sugar
10 Ounces of Coarsely Chopped Lobster Meat, Cooked*
2 or 3 Tablespoons of Sherry (or to taste, whichever comes first)
Salt and/or Pepper (to taste)
*Use a tea towel or something similar to blot the lobster meat in order to remove excess liquid. It is capable of thinning the bisque.
Instructions
1. Take a heavy saucepan and melt the allotment of butter over a medium-low heat.
2. Add your finely diced celery and scallions; cook for approximately three minutes (or until
the vegetables begin to soften).
3. Add the sweet rice flour and whisk with care to blend with the vegetables. Increase the
heat to medium and cook for about another three minutes with frequent stirring.
4. Take your half and half and slowly pour it into the vegetable mixture; stir until fully
blended.
5. Stir in the tomato paste in the same manner.
6. Return the heat to medium-low heat and cook for approximately five minutes or until the
bisque begins to visibly thicken.
7. Add the various seasonings (paprika, Old Bay, cayenne, sugar) plus your sherry of
choice to the food. Stir to blend.
8. Add in the cooked lobster meat, making sure it’s blotted free of excess liquid
beforehand.
9. Add salt and pepper to taste.
10. Allow the bisque to simmer over low heat for around five minutes, until heated all the
way through.
Serve hot and enjoy!
